Let’s Eat | Gluten Free Wraps

Recently I have been trying to give up bread, milk and wheat. For the last few weeks I’ve been so bloated and uncomfortable so I’m trying to figure out what it is that is making feel so awful, I have a sneaking suspicion it could be wheat.

And going gluten/wheat/lactose free is fine but it takes a lot of organisation to stick to it when you work in an office, operation sort out lunches needs to be in full swing so I’ve started having a go at a few quick and easy recipes  that I can go back to and make yummy, healthy food with minimal effort.
Newburn Bakehouse got in touch with me regarding these new Newburn Bakehouse Mini Wholegrain Wraps with Ancient Grains that had been launched, and given my digestive requirements these days, I thought it would be the perfect way to come up with some quick recipes as well as introduce some food content to the old blog. These wraps are really great if you are trying to eat a bit healthier, especially with the indulgent festive season around the corner! As the packaging says they are gluten/wheat and dairy free and contain ancient grains like quinoa which everyone swears by these days, here’s a bit more info on all the benefits:

Now we’ve been suitably educated about what we’re putting into our bods, let’s get onto the recipe for my Healthy Chicken Burrito Wrap.
You will need:
Olive Oil
1x Chicken Breast
Seasoning – I use Cayenne Pepper, Garlic, Chilli, Salt & Pepper
Rice – I use Uncle Ben’s Rice Medley
Tin of Kidney/Mixed Beans
A tub of Guacamole
Cherry Tomatoes
Red Onion
Prepare the chicken
To prep the chicken rub in the olive oil, sprinkle on as much cayenne pepper as you like (I like ALOT!), rub into the meat, add chilli (fresh or flakes, up to you) salt and pepper and rub into chicken as before. I then wrap this in foil, place on a baking tray and cook for about 25-30 mins on 200 degrees or equivalent, I have a fan oven.
Prepare the rice
As I can’t cook rice and don’t have a microwave I empty my Uncle Ben’s Rice Medley into a pan, I then add in the tinned beans and a bit of water and bring to the boil.
Once this is done, get it on those Newburn Bakehouse Mini Wholegrain Wraps with Ancient Grains and add a generous a dollop of Guacamole!

To serve I chop up some tomatoes and red onion to make a little side salad and we’re ready to eat!
